Looking for a healthier alternative? Let’s break out of the shell. Deviled eggs are a favorite of nearly everybody, and honestly, when is the last time you had a good, tasty deviled egg?
While shopping at the New Ulm Community Market & Coop last week, I found so many great locally produced products to create super fabulous appetizers that would make anybody the star of their super bowl party.
Let’s start with a basic deviled egg. Did you know there is a right way to boil an egg? You won’t want to make these with anything other than free range, fresh from the farm eggs. I found mine at the Co-op from Dennis Jeske of Windjammer Farms in Hanska, MN.
* Eggs that are too fresh are difficult to peel, so always keep eggs in the refrigerator for a week or two before making boiled eggs.
* For best results, take eggs out of the refrigerator and let them come to room temperature before cooking.
* Put one dozen eggs in a pan large enough to hold all the eggs in a single layer, with water to cover eggs by at least an inch.
* After 12 minutes, drain eggs, and add cold water with a couple of ice cubes.
* Let eggs cool at least 10 minutes in cold water, then drain and store in refrigerator.
Cut the egg in half lengthwise. Separate the yolk from the whites, placing the yolks in a bowl and mash them well.
Add ½ c. mayo, 1 T. prepared mustard, a pinch of salt. I like a little tang in my deviled eggs. My secret ingredient is vinegar. Onion and Dill Herbed Vinegar from Heart & Harvest is available at the Co-op. Just a teaspoon will give the mixture a great depth and burst of flavor! I chose the onion and dill variety because both herbs work well with eggs, but Tarragon or Dill, Chive & Peppercorn herb vinegar can be just as successful.
Spoon a dollop into each egg white well , sprinkle with paprika. Heart & Harvest’s All Purpose Seasoning Blend contains flavorful smoked paprika along with six other spices. Just the right touch to add color and a subtle hint of exotic flavor.
For the more adventurous pallet, try a little Sriracha Rooster Sauce or wasabi mayo in the yolk mixture. The flavors will explode in your mouth!
And the last step will by the hardest. Try to resist eating them before game day.

Some of you may be familiar with the farmer who recently came forward to reveal what being a contract farmer for Perdue Chicken looks like. If you’re not squeamish I recommend watching it here:

To summarize, contract farmer Craig Watts was fed up with Perdue Chicken’s labeling of their product as cage free and humanely raised. He allowed cameras in his buildings to view typical living conditions for these birds. The birds were often delivered to him sick. Once they grow they have little room to move, nor little ability. See, these birds have been bred to have enormous breasts. They are not capable of moving well. They lie in their own feces and develop awful sores on their bellies. The farmer’s contract prevented him from opening up the building and providing air to the chickens.
After reading about Watts, I felt compelled to write something. This seemed as good a place as any. I am saddened by what this farmer has gone through. I hope for the best for him. I am glad to see that he is fed up and ready to explore other options. I wish Craig Watts success in his journey. Unfortunately, I wasn’t surprised by the video. I just wasn’t. Labels can be deceiving. Marketing can be deceiving. This is why it is so important to know your farmers! I would be suspicious of buying anything from a farm that wasn’t willing to let you come have a visit to see how things are done. There is better out there. I’ve seen it.
A good friend of mine gave me a name for myself a few years ago. It’s a humaneitarian. A humaneitarian is a person who eats meat from humanely raised animals. At the New Ulm Community Market and Cooperative we welcome gluten-free, GMO-free, humaneitarians, vegans, vegetarians, and those that are just starting to learn about making better food choices. We know that you will find something you can be proud of buying. If you have questions, we welcome them. If we don’t have the answer, we will get it for you.

It’s always a good day when we can get the word out about our mission for food, education, and community and Peyton wrote a great article about us. What is a Kickstarter campaign? Kickstarter is a crowdsource funding site where projects, inventors, artists, and many other sorts of people with great ideas and worthy causes can offer an opportunity for people to fund their efforts. Many great ideas never get off the ground simply because there’s a lack of funds available. Crowdfunding is a way to let many people put up a some money to make these dreams and good ideas come to fruition.
As NUCMC reaches the halfway mark on our membership goals we get to start the fun jobs of preparing our building and getting the equipment we need as a full-time grocery. There’s a few small construction projects that need to be completed to meet requirements and we’ll need coolers, freezers, and shelving of course! The money raised in this Kickstarter campaign will help us complete those projects.

- Get a bunch of each vegetable for every two adults and put the pan on between med and med low (on our stove that’s #4).
- Wash the radishes and save any greens.
- Halve (quarters are better for soup) the radishes. If your using butter start it melting.
- When your fat is liquified add the radishes. Start chopping the green onions and radish greens and add them to the radishes.
- Add the broth. (If you want some juicy veg on the side just cover the bottom of the pan. If you want a soup 1c. per person is good.)
- Cover the pan for a few minutes (no more than 5min) and it’s ready to serve.
The radishes will lose their bite and be tender and rosy, the greens will be bright and you’ll have a warm but light dish that we like to serve with cream cheese and tarragon omelettes. WARNING: Anyone tempted to puree this simple side dish/soup will be rewarded with an off-putting bowl of fleshy liquid.
Gluten-free diets are a hot topic lately and awareness of diagnosable illnesses such as Celiac disease is becoming much more wide-spread. Perhaps you’ve discovered gluten intolerance yourself or someone you cook for needs a gluten-free diet. Keeping your menu fresh and interesting can be hard enough when you don’t have gluten limitations, GF compounds the problem.
NUCMC is hosting a Gluten-Free Gab and Potluck May 19th. It’s an opportunity to get some new recipes, learn how other people are living with Gluten-Free, and share some good food. For those with gluten intolerance it’s also a great chance to enjoy a potluck where they can eat everything offered (a rare opportunity for sure!).

Bring a non-member friend to introduce them to the benefits of being a NUCMC member. A food coop can be a huge help in finding gluten-free foods by bringing a larger selection to your community.
One of the most frequent questions I get when talking to potential members (and even from some members) is “I like the Indoor Markets but will NUCMC ever be anything more?” The answer to that is YES!
The Indoor Market was an idea the NUCMC board came up with to make good use of our building while we build the capital to open the food coop. It was a great chance to get some exposure for local vendors AND bring people into our space to learn more about NUCMC and maybe even become a member. It’s been a real pleasure to work with the vendors that have participated in our Markets!
But the plan is to be more than the Indoor Market. The board’s plan for NUCMC is to be a full time grocery store. There is still a lot of work going on planning for being open full time. There’s decisions like:
- What products will we stock?
- What hours will we be open?
- What equipment is needed?
- How will we staff a full time grocery?
Once we have these decisions made we still need members and volunteers to help spread the word about NUCMC to bring in as many memberships as possible. Our goal for membership is fairly small – only 300. We know that there’s a lot of need for a Coop food experience in the greater New Ulm area. We need everyone’s help to spread the word and talk to potential members about how a Coop can help meet their food needs! Together we can reach that goal and get closer to opening our Cooperative as a grocery store full time!
If you’re a reader of River Valley Woman magazine you may have noticed us making appearances from time to time. Sharp-eyed readers may have seen an article written by NUCMC member Brooke Knisley in this month’s issue (pg 53) that mentions our Co-op. Thanks Brooke for plugging our winter Indoor Markets! Our next Indoor Market will be Saturday, March 22 9am-2pm. We’d love to have everyone stop by and check out the local vendors we’re proud to feature.

There were quite a few folks who stopped in for the first time and we handed out a lot of brochures and membership applications.
